This is seriously the easiest meal to pull together on a busy weeknight. It is gluten-free, dairy-free and takes only about 30 minutes to prepare.
Oh, and did I mention it only has three ingredients? That’s right! Just three to make a seriously delish pasta dish that feeds 4. Toss in a salad and you are ready to go!
My secret to making pasta fast when life is a rush is keeping around some of the BEST gluten-free ready-made pasta sauce in my pantry. My local market keeps in stock (and frequently on sale) the Classico® Olivo Garden Vegetable Pasta Sauce – which is clearly labeled gluten-free. I keep this around for quick sauces on pizza, in pasta and in soups and stews – and pretty much whatever else for which I want to use it! It makes a fantastic marinara for dripping fried foods as well.
For this dish, I make it a habit to keep around pasta boxes that serve only a few people. (After all, it is just the hubby and me.) We usually have about two servings left over to freeze for future lunches.
This time, I used a box of Sam Mills Gluten-free Corn & Quinoa pasta – but you can use whatever you have around. (I got this for 75 cents per BOX during a successful bulk shopping spree.) Add to this the sauce and you have a healthier version of the sodium-laden (and totally not gluten-free) Hamburger Helper®.
You can use any meat for this. I got a great deal on pound packages of bison at my local Gerbes ($3.99 per POUND – half the formal price). Bison does not contain rbsT man-made hormones, which can cause problems with the body. (I avoid this as much as possible due to how my body reacts to foods with it.)
If you need a quick, simple dinner, keep these items on hand to save yourself weeknight stress.
- 1 pound of ground meat (chicken, turkey, bison, beef, or sausage, or a combination)
- 1 package of pasta mix that serves about 4 people
- 1 jar of gluten-free pasta sauce
- Cook pasta according to package directions.
- Cook the meat until no pink is showing.
- Add cooked pasta and pasta sauce to meat and cook on low until everything is heated through.
- Serve with a salad.
