I love cupcakes – but I rarely bake them.
I’m more of a biscuit-dumpling-cookie kind of girl. Plus, finding gluten-free icing that doesn’t have a lot of other junk in it is nearly impossible.
Sure, I have a few hacks for easy icing, but I don’t always have the coconut milk or avocados. on hand to make them.
That’s what happened today.
I decided I wanted cupcakes without the hassle.
In comes Aldi. On my last trip to this wonderful discount market, I had the foresight to purchase a box of the (absolutely fabulous) Aldi Live G Free brand of cupcake mix. I had an unopened jar of Aldi’s brand of gluten-free hazelnut spread in the cupboard.
So today, cupcakes.
Yummy, moist, delicious cupcakes. With hazelnut spread.
And no guilt. (Well, maybe a little.)
Bake the box according to package directions. When the cupcakes cool, coat with the hazelnut spread. If you like cream cheese, you can mix equal part of hazelnut spread and cream cheese or its dairy-free substitute to create a new flavor.0
